Nothing beats a luscious chocolate pudding; we like to swap the traditional pavlovas and trifles for this decadent chocolate pudding made for feasting. You can make the mix ahead of time and have it ready to bake in your skillet. Once the main is served just pop the skillet in the oven and dessert should be ready in time. Adding the berries and mint as garnish will make it look and taste more festive.

INGREDIENTS
400 gms of dark chocolate chopped
360 grams butter
6 large eggs
250 grams caster sugar
2 teaspoons vanilla extract
4 tablespoons plain flour
1/2 teaspoon sea salt, we use Maldon
1 cup roughly chopped macadamias
1 punnet each of raspberries, strawberries and blue berries or a mix of your favourite fresh berries
Icing sugar to dust
Mint to garnish
To serve optional – a large dollop of your favourite store-bought ice cream
Equipment: Large cast iron skillet or baking pan.
Preheat the oven to 160°C circotherm.
Step 1
Turn your NEFF induction on level 7 heating.
Step 2
Take a bowl that fits neatly over a saucepan. Create a double boiler by filling the saucepan with water and bringing it to a boil.
Step 3
Turn down the temperature to medium heat and put the butter and chocolate in the bowl and place over a saucepan to melt.
Step 4
Once the chocolate has melted, take the bowl off the heat and allow to cool down.
Step 5
Using a kitchen aid or electric beater whisk together the eggs, sugar and vanilla extract until the mixture becomes pale and thickens.
Step 6
Stir in the melted chocolate, then use a large spoon to fold in the flour and salt.
Step 7
In a dry pan quickly toast the macadamias.
Step 8
Stir in half the macadamias and pour the mixture into your cast iron skillet or into prepared baking dish.
Step 9
Garnish with remaining macadamias and bake for about 25-30 minutes.
Step 10
Check that the pudding is set but still has a bit of a wobble in the centre.
Step 11
To serve: chop large berries and scatter on the pudding, scatter mint. leaves if using, dust with icing sugar and serve warm with a dollop of your favourite store-bought ice cream.
